Joe Eubank

Joe Eubank is a naturalized Texan, originally an 11 generation Floridian from Pensacola where he received the Sacraments of Baptism at Little Flower parish, and penance, communion and confirmation at St. Anne’s in Gulf Breeze.  Joe graduated from the University of W. Florida with a BS in Systems Science and moved to Texas in 1983.  His wife, Angie, is a native Texan from Lancaster, where they met at St Francis.  Together they received the Sacrament of Marriage in 1987 at Mount St. Michael’s Chapel.  They were blessed with and raised their five children;  Catherine, Beatrice, Joseph, Cecilia, and Marianna, in DeSoto.  

Angie and Joe started their business in DeSoto in 1991 and retired in May 2025.  Their former business provided IT support for small businesses in the DFW area, and are now empty nesters.  They now babysit their 5 year old Grandson on a part time basis, and soon to come, granddaughter due in May.

Influenced by Paul Fehmel and Jorge Ruiz, Joe joined the Knights of Columbus in 2021  Joe’s goal as a Catholic is to embrace our universal call to become a Saint.  He says he has been blessed with many role models to illuminate his path to holiness,  “We have some great priests and members in our council and parish.”   A few of his role models are his parents, Most Rev Msg. James Tucek,  Msgr.  Mike Tugwell, and Mario Tiambeng.  His current plan for retirement is to serve God, his family, and others through the Knights and parish. His next big service project is to help build a house for a family in need in Juarez, Mexico in January.    Joe is frequently inspired by a recurring intercession in the Mass and Breviary:  “Lord, grant us the wisdom to discern your will and the courage to do it,”
